All of my cooking woods are excellent for cooking just about any food on a barbecue. Below is a list of tried and tested favorites.

Keep in mind everyone has their own taste preferences so if you are new to cooking with wood or just want to experiment, try one of our sampler boxes to find out what best suits you.

Sweet fruity barbecue flavor. Especially good for pork and ham. Great for game birds, turkey and beef as well.

Mesquite Cooking Wood

Bold earthy flavor, great for any kind of beef or burgers. See how I cooked a tri-tip using mesquite on a gas grill! An all around wood for just about anything. The famous Texas barbecue wood.

Oak Cooking Wood

Mellow aromatic flavor, excellent all around smoky flavor good for beef, pork, chicken, fish, burgers dogs or sausages.

Olive Cooking Wood

Olive wood is very distinctive. It adds a very sweet smoky flavor to your meat. Best for chicken, pork or fish but can be used for beef as well.

Pecan Cooking Wood

Mild nutty flavor, good all around wood. Some say it is very similar to a hickory smoke but I think it is much tastier!

Pistachio Cooking Wood

My personal favorite. A strong yet mild nutty taste and smoke. I almost exclusively use pistachio for cooking steak.
